INGREDIENTS
5-6 tindas, ½ cup onions, finely chopped, 2 cups tomatoes, finely chopped, 1 tsp red chilli powder, 1 tsp ginger-garlic paste, 2 cups of soy granules (boiled with a little salt), 1 tsp dry mango powder
1 tsp black, pepper powder, coriander leaves, for garnish salt to taste
METHOD
• Heat 2 tsp oil in a clean skillet and add onions to it. Once they turn golden brown, add the tomatoes, chilli powder and ginger-garlic paste.
• Sauté on low heat till the tomatoes blend with the onions. Add a little water and bring it to a boil. Mix in the salt and remove from heat. Keep aside.
• Wash the tindas and chop them from the top. Clean the insides to remove the seeds and pulp and keep aside. (You can also peel the tindas before cleaning the insides).
• Mix together the soy granules, mango powder and black pepper powder to prepare the filling. Fill the tindas with this preparation.
• In a baking tray, first pour the onion-tomato mixture and then place the stuffed tindas on it. Bake at a desired temperature so as to cook the tindas completely. Garnish with coriander leaves and serve hot.
