Tangy Quinoa & Vegetables In a Piquant French Dressing & Mint

INGREDIENTS
Quinoa, Dijon mustard, Lemon, White wine vinegar, Salt, Pepper, Sugar, Olive oil (extra virgin), Arugula leaves, Baby spinach, Cucumber, Tomato, White onion, Parsley

METHOD
• For the salad: Put arugula leaves along with baby spinach, diced tomato, white onion, diced cucumber and cherry tomatoes in a salad bowl.
• Add tangy lemon vinegar dressing to the veggies.
• Mix well; serve fresh.
