INGREDIENTS
1 kg spinach, 50 g oil, 1 tsp mustard seeds, 8 green chillies, 10 garlic flakes, peeled, 200 g onions, chopped, 150 g tomatoes, chopped, 1 tsp chilli powder, 1 tsp coriander powder, 1 tsp turmeric powder, 50 g coconut paste, salt to taste
METHOD
• Heat oil in a pan.
• Add the mustard seeds, green chillies, garlic and chopped onions and cook till they are translucent.
• Mix in the tomatoes, powdered spices and salt and let it cook for a while.
• Finish with coconut paste and stir well.
• Remove and serve hot.
