INGREDIENTS
For the Rajma Patties
150 g rajma (kidney beans), 60 g boiled potatoes, 2 green chillies, chopped, 5 g fresh coriander, chopped, 1 tsp shahi jeera, 30 g chana powder, roasted, 30 ml desi ghee, salt to taste, 4 cheddar cheese slices
For the Paratha
150 g wheat flour, salt to taste, water, as required, 5 ml oil
METHOD
For the Rajma Patties
• Soak the rajma overnight.
• Wash it well the next day and boil it.
• Once cooked, drain the water and keep aside on a strainer.
• Mash the boiled rajma and add all the ingredients to it except ghee and cheese; mix well.
• Now divide the mixture into small portions and shape each portion into patties (tikki).
• Shallow fry in desi ghee on a pan and serve hot with paratha.
For the Paratha
• Mix all the above ingredients and make soft dough.
• Divide the dough into small portions and roll each portion to make small parathas of a similar size and shape as the patties.
• Cook the paratha well on a pan till crisp.
For the serving
• Place the patties on the paratha; then place the cheddar cheese on top and gratinate it.
• When the cheese gets melted, place the other paratha on top to make a sandwich.
• Serve hot.
