INGREDIENTS
½ cup quinoa, washed and drained, 1 small onion, chopped, 2 cups of mixed vegetables, such as tomatoes, beans, carrots, peas, cabbage, zucchini and mushrooms, 4 cups broth/stock/water, Green chillies, slit/ crushed pepper, to taste, Salt and pepper, to taste, Coriander, chopped, to garnish, Lime juice, to taste, to garnish
METHOD
• Cook washed quinoa, onions, the 2 cups of mixed vegetables, green chillies, broth and salt in a pressure cooker for one whistle.
• When cooled, decant the content into a serving bowl, and add cilantro, black pepper and lime juice to taste.
• Serve hot with garnishes of your choice.
