INGREDIENTS
1½ cups grated coconut, 2 onions, chopped, 1 ‘‘ ginger piece, 5-6 garlic cloves, 2 potatoes, cut into chunks, 250 g parwals (pointed gourd), chopped, ¼ tsp turmeric powder, 1 tsp garam masala, oil for frying, salt to taste
METHOD
• Take one cup of grated coconut and transfer it into a blender.
• Add hot water and blend the mixture.
• Pour this thick milk into a vessel and keep aside.
• Mix onions, ginger and garlic and grind it into a fine paste.
• Heat oil in a deep pan. Add the potatoes, parwals, salt and turmeric powder and let it cook till the mixture is golden in colour.
• Mix in the ginger-garlic paste. Stir well and add the coconut milk.
• Now add the remaining grated coconut and garam masala and let it cook till done.
• Adjust the consistency of the gravy. Remove from heat and serve hot with steamed rice.
