PAN-SEARED CHICKEN AND VEGGIES

Ingredients
100 g chicken breast (cut into 2-3 inch diagonal pieces and flattened), 3-4 tbsp flour (seasoned with salt, pepper and oregano), 2 tbsp olive oil, 3-4 garlic cloves, smashed, 3-4 fresh mushrooms, sliced, Chicken seasoning, to taste, 1 cup chicken stock, Fresh oregano, Fresh parsley, to garnish, Salt and pepper to taste

Method
• Coat the chicken breast pieces in seasoned flour and keep aside.
• Heat olive oil in a pan; sauté the coated chicken pieces and garlic in it for 3-4 minutes.
• Add mushrooms and stir it well.
• Add the chicken seasoning and stock.
• Cook for a few minutes or until the chicken is tender.
• Garnish with parsley leaves and oregano and serve with steamed rice.
