INGREDIENTS
1¼ cups green gram split (moong dal), 250 g cauliflower, 6 green chillies, 1¼ cups rice, ½ tsp turmeric powder, 2 tsp cumin powder, ½ tsp red chilli powder, 6 cups water, 4 medium-sized potatoes, cubed, ½ cup peas, ½ tsp sugar, salt to taste
For the seasoning
4 tbsp ghee, 2 bay leaves, 3 red chillies (whole), 4 green cardamoms, 6 cloves, 2 cinnamons (1” pieces)
METHOD
• Roast the moong dal, cut cauliflower florets and slit green chillies.
• Wash rice and drain the water.
• Make a paste of turmeric powder, cumin powder and red chilli powder
• Take water in a big-sized pot and cook the dal and rice in it.
• When the rice is half done, mix in the spice paste, green chillies, potatoes and peas and allow it to simmer.
• Cook till the dal and rice is done.
• Heat ghee in a pan, add the ingredients for seasoning and stir-fry for a minute.
• Add sugar and salt and serve hot with pure ghee on top.
