Kazaracho Arroz

INGREDIENTS
40 gm Basmati rice, 1 tbsp lard or ghee, 20 gm onion, finely chopped, ½ tsp turmeric powder, 400 ml caldo/broth, 25 gm Goan Chorizo sausage, 1 no. bay leaf, Salt to taste

For Caldo/broth
500 gm chicken bones, 30 gm onion, 40 gm carrot, ½ tsp black crushed peppercorns, 1 ltr water, Salt to taste

METHOD
• Wash and soak the rice in water; keep aside.
• Combine all ingredients for the Caldo and make a broth for the rice. Simmer for 30 minutes.
• Take a heavy-bottomed pan, add ghee/lard, bay leaf, onions, turmeric powder and Goan chorizo sausage in it. Cook the sausage until oil is released.
• Add the soaked rice and Caldo broth in the pan.
• Cover with lid, and let it cook for 15 minutes.
