Ingredients
150 g Mexican beans, 1 onion, chopped, 2 tsp garlic, minced, 2 tsp tomato paste, ¼ cup tomato purée, 2 tsp Mexican seasoning, 1 tsp cayenne pepper, A pinch of sugar, 1½ tbsp olive oil, Mozzarella cheese, grated, Parsley, for garnish, Nacho chips, to serve, Salt and pepper to taste
Method
• Heat olive oil in a big ceramic pan. Fry the onions and garlic in it.
• Add some fresh tomato purée and tomato paste.
• Season it with salt, pepper, Mexican seasoning, cayenne pepper and sugar. Cook the mixture till the oil separates.
• Add the Mexican beans. If you are using a canned version, use some liquid too. Mix it well.
• Then top it with grated mozzarella cheese. Let it simmer in the pan till the cheese is melting.
• Garnish with fresh parsley and serve with nacho chips to dig into the pan.
