INGREDIENTS
1 large brinjal, ½ tsp cumin seeds, 3 green chillies, slit, 1 tsp turmeric powder, ½ tsp red chilli powder, 200 g curd, 1tsp sugar, salt to taste, mustard oil as required
METHOD
• Cut the brinjal into roundels.
• Marinate the cut roundels with turmeric powder and salt. Keep aside for 15-20 minutes.
• Heat oil in a pan and fry the brinjal pieces till they become soft and brownish yellow
in colour. Keep the fried pieces aside.
• Heat oil in a pan and add the cumin seeds. When the seeds splutter, add the ginger paste and fry for a few minutes.
• Add the green chillies, turmeric powder, red chilli powder and a little water. Fry the masala and reduce the heat.
• Now beat the curd with salt and sugar and add it to the masala. Stir gently for a while.
• Mix in the fried brinjal pieces. Cover and let it cook for a few minutes.
• Remove from heat and garnish with coriander leaves.
• Serve hot with steamed rice.
