INGREDIENTS
1 small purple cabbage, shredded finely
For the vegan mayonnaise
½ cup cashews, ½ tsp chopped onions, 1 garlic clove, ¼ tsp mustard powder, ¼ tsp raw sugar, water, as required, juice of half a lime, chopped coriander or parsley, for garnish salt to taste
METHOD
• Blend all the ingredients for the vegan mayonnaise (without water and lime juice).
• Once it gets finely blended, add lime juice and water and mix it into a smooth thick paste.
• Mix in the paste with the finely shredded cabbage.
• Garnish with chopped coriander or parsley leaves and serve.
