INGREDIENTS
For the flour
400 g wheat flour, 1 tbsp oil or ghee, salt to taste, 150 g split chana dal , 50 g sugar or jaggery, 8-10 green cardamoms, 100-150 g ghee or oil
METHOD
• Soak the chana dal for 4-5 hours.
• Mix the wheat flour along with ghee, salt and warm water and knead into smooth dough. Cover it and keep aside for 20 minutes.
• Pressure-cook the chana dal with 2-3 tbsp of water. Turn off the heat after one whistle.
• Once the dal cools, grind to a fine mixture, but without using any water.
• Now heat 1 tbsp ghee in a kadhai, add the ground dal and powdered sugar. If you are using jaggery, add small pieces in hot ghee. When the jaggery melts, add the ground dal.
• Fry the dal for five minutes, cool and mix in the powdered green cardamom. Keep the dal mixture aside.
• Now take the prepared dough and make small balls. Flatten each ball and stuff about 2 tbsp of the dal mixture in it. Seal the edges and press the ball carefully between your palms.
• Roll the stuffed ball to make a circle of 6-7” in diameter.
• Now heat a griddle and shallow fry these circles while applying oil on both the sides. Cook well till it turns golden brown on both sides. Remove and serve hot with ghee.
