INGREDIENTS
4 whole corns, de-husked, 4 tbsp butter, 2 tbsp cajun spice powder, Juice of one lemon, ½ cup coriander, finely chopped
METHOD
• Wash the corn well to remove any husk or corn silk and cut it into two-three pieces. Repeat with the remaining corn.
• Boil it in salted water till half-cooked and drain it well.
• Heat butter in a skillet or non-stick pan, add the cajun spice powder and mix well.
• Add the corn and sear on medium-high heat till you hear light popping sounds.
• Turn the corn over and char it evenly on all sides.
• Turn off the heat, sprinkle lime juice and mix evenly.
• Garnish with chopped coriander, toss lightly and serve.
