INGREDIENTS
1 cup heavy whipped cream, 3 tbsp confectioners’ sugar (powdered sugar), 60 g unsweetened chocolate, chopped, 3 tbsp shortening (fat) or butter, ¾ cup cake flour, 6 tbsp sugar, 1 tbsp baking powder, ½ tsp salt, 2 eggs, 1½ cup milk, 1 can cherry pie filling, Chocolate sprinkles or fresh mint, for garnishing (optional)
METHOD
• Take a small bowl and beat the cream until it begins to thicken.
• Add confectioners’ sugar (powdered sugar) and beat until soft peaks form. Refrigerate until serving.
• In a microwave, melt the chocolate and shortening; stir until smooth. Cool slightly.
• In a large bowl, whisk flour, sugar, baking powder and salt.
• In another bowl, whisk egg yolks and milk until blended. Stir in the chocolate mixture. Add to dry ingredients; stir until moistened.
• In a clean bowl, beat the egg whites until stiff but not dry. Fold it into the batter. Bake in a pre-heated waffle iron (according to directions) until set. Yield five waffles out of the batter.
• Serve with cherry pie filling and a little whipped cream, topped with chocolate sprinkles.
