MUSHROOM AND CHEESE CALZONE

Ingredients
For the DOUGH

250 g flour, 10 g sugar, 7 g yeast, 125 ml warm water, 5 g salt, 10 ml olive oil, 1 tsp egg wash or milk wash

For the filling
1 onion, chopped, 1 tsp garlic, minced, 100 g chicken mince , 3-4 fresh mushrooms, cubed, 1 tbsp red yellow and green, peppers, cubed, 2 tbsp tomato paste, 1 tsp cayenne pepper, ½ tsp mixed herbs, ½ cup white sauce, 1 cup mozzarella cheese, Fresh parsley, for garnish, Salt and pepper to taste

Method
For the dough

• In a bowl, dissolve the sugar and yeast in warm water. Keep aside.
• Take flour in another bowl. Make a well in the centre and pour the dissolved liquid.
• Mix well and add the salt and knead till the dough is soft and smoother.
• Apply olive oil and massage the dough. Leave it to rise until it doubles in size.

For the filling
• Heat oil in a pan and sauté the onions and garlic in it. Once translucent, add chicken mince and veggies to it.
• Fry for a minute and add tomato paste and all seasonings to the mixture. Stir it well.
• Add the white sauce, cheese and fresh parsley. The filling is ready.

For the assembling
• Put a thin layer of the dough rolled out down at the bottom of the pan.
• Add the filling on it, cover with another layer on top and pinch together.
• Brush it with egg wash or milk wash. Prick with a fork in the centre to let the steam escape.
• Bake for 20-25 minutes till done or till the top is golden brown.
• Cut into wedges and serve.
