INGREDIENTS
A loaf of multigrain bread, 1 tsp garlic, minced 2-3 fresh mushrooms, diced, 1 porcini mushroom, soaked in hot water for 10 minutes, ¼ cup peppers (red, yellow and green), diced 25 g zucchini, diced, 1 tbsp tomato paste, 1 tsp cayenne pepper, A pinch of mixed herbs, 2-3 tbsp goat cheese/cream cheese, 50 g mozzarella cheese, 1 tsp butter, 1 tbsp olive oil, Salt and pepper to taste
Method
• Butter the multigrain bread and keep aside.
• Heat olive oil in a griddle pan, add garlic and toss in all the veggies.
• Add tomato paste and season well with salt, pepper, cayenne and some mixed herbs.
• Spread goat cheese on the bread and layer the toastie with the veggies.
• Then add mozzarella cheese and grill in the same pan.
• Serve, when crispy and oozing with cheese.
