HERBY POTATO AND SAUSAGE FRITTATA

INGREDIENTS
1 potato, cut into roundels , 5-6 eggs, 3 peppers, chopped, A few fresh basil leaves, Chilli flakes, as per taste, 1 small onion, chopped, 2-3 sausages, chopped, 2 tbsp parmesan cheese, 50 g mozzarella cheese, Cherry tomatoes, halved for garnish, ½ tsp mixed herbs, Salt and pepper to taste, 2-3 tbsp olive oil,
for frying

METHOD
• Heat olive oil in a pan and add potato roundels. Keep turning and frying till they become golden on both sides.
• In another bowl, break the eggs and season it with salt and pepper, chilli flakes and some basil leaves. Keep the mixture aside.
• Add onions and sausages to the pan with the potatoes, then add the egg mixture and top it with parmesan and mozzarella cheese.
• Cook for two minutes and shift to a pre-heated oven for 5-10 minutes until it turns golden.
• Garnish with cherry tomatoes and mixed herbs. Serve your yummy frittata right out of the pan.
