INGREDIENTS
250 g chicken (boneless), cut into small pieces, 1 tbsp ginger, freshly grated, 1 tbsp garlic, freshly grated, 2 green chillies, finely chopped, 20 curry leaves, finely chopped, 40 g corn flour, 40 g rice flour, 1 tsp tamarind pulp, 1 tsp black pepper powder, ½ tsp turmeric powder, 1 tsp red chilli powder, salt to taste, refined oil, for frying
METHOD
• Put all the ingredients (except chicken) into a mixing bowl and make a batter.
• Add the chicken into the batter and mix it well. Keep it for 20 minutes.
• Deep-fry the chicken pieces until cooked and crisp.
• Serve hot.
