Murgh Akbari Kebab

INGREDIENTS
200 gm chicken tikka, 2 tbsp fresh cream, 20 gm Amul cheese, 2 tsp hung yoghurt, ½ tsp cardamom powder, 4-5 nos. saffron strands, 1 tsp yellow chilli powder, ½ tsp shahi jeera powder, Salt to taste, ½ tsp garam masala powder, 2 tsp oil, 1 tsp butter, 1 no. egg yolk, Silver vark, Chaat masala to garnish

METHOD
• Marinate the chicken with ginger, garlic, shahi jeera powder and salt.
• Grate and mash the cheese well; add egg yolk, fresh cream, yoghurt, saffron strands, garam masala powder and yellow chilli powder and then add the marinated chicken to it. Refrigerate the marinade for a few hours.
• Next, add the egg white to the marinated meat and mix well.
• Put the marinated meat in the skewers and cook in a pre-heated tandoor.
• Baste the chicken with butter, oil and cook well.
• Garnish with silver vark and a sprinkle of chaat masala. Serve hot.
