INGREDIENTS
1 long baguette, cut in half horizontally, 5 tsp olive oil, ½ cup softened butter, 4 tsp crushed garlic, 2 medium tomatoes, diced, ½ medium onion, diced, 1½ tsp salt, ¼ tsp pepper, 2 tsp basil, 1 tsp oregano, Chopped fresh basil, 1 cup mozzarella cheese
METHOD
• Combine tomatoes, onion, 5 teaspoons of olive oil, salt, pepper, basil, oregano and mix.
• Combine butter with garlic and spread evenly over the baguette. Make sure the baguette is covered right up to the edges, or else they will burn much quicker than the middle.
• Broil baguette open-faced until lightly toasted.
• Add tomato and onion mixture on top.
• Slice baguette diagonally or into desired size and sprinkle the basil on top, serve.
• If desired, before slicing add cheese on top and warm in the oven at 375°C until cheese melts; slice, serve, and enjoy.
