INGREDIENTS
Silken tofu, Spinach, Sesame seeds, Yellow zucchini, Atari goma, Rice vinegar, Sugar, Light soya sauce, Sesame oil, Paper napkin, Bubu arare (rice puff)
METHOD
• First hang tofu for an hour; then mix the blanched and chopped spinach with the tofu.
• Add salt and pepper in the mixture of tofu and spinach.
• Next make a mould out of this mixture and cut into three pieces.
• Apply sesame seeds on them.
• To finish, sprinkle with rice puff (bubu arare).
GARNISH
• Decorate with blanched yellow zucchini by cutting it in the shape of flowers.
