Ingredients:
2 tbsp olive oil, 2 tbsp fresh lime juice, 2 tbsp mango chutney, 1 tbsp low-sodium soy sauce, 3/4 tsp grated peeled fresh ginger, 4 skinless, boneless chicken-breast halves, Cooking spray, 8 cups mixed salad greens, 1 cup diced peeled mango, ¾ cup diced peeled avocado
Method:
• Heat the grill.
• In a small bowl, mix olive oil, fresh lime juice, mango chutney, soya sauce and ginger. On a separate large plate, place the chicken and marinate it with 2 tbsp oil mixture made in the bowl. Marinate on both sides and let it stand for 5 minutes. Keep the leftover oil mixture for the dressing.
• Spray some cooking oil on the grill and place the chicken on the rack. Grill each side for 4 minutes or till the chicken is done, brushing with the oil mixture from time to time before turning. Slice the cooked chicken crosswise into stripes.
• Take a plate and arrange the greens, mango and avocado and then put the chicken on top of the salad. Pour or drizzle the balance leftover oil mixture reserved as a dressing, over the salad. Your healthy yummy salad is ready.
